Ingredients:

  1. Cooked rice – 2 cups
  2. Water – 4 cups (approx.)
  3. A small piece of ginger (optional)
  4. 1-2 green chilies (optional)
  5. A pinch of lemon (or a few drops of lemon juice)
  6. A pinch of salt
  7. Curry leaves, coriander leaves, and fried items like potato fry or fish fry for serving (as side dishes)

Method:

  1. Preparation of Pakhala:

    • Take the cooked rice in a large bowl.
    • Add water to it until the rice is completely submerged.
    • Add a pinch of salt and mix it well.
    • Allow this mixture to ferment. Keep it at room temperature for about 5-6 hours during summer or for overnight fermentation during other seasons. The duration of fermentation can depend on the climate, so adjust accordingly.
  2. Serving:

    • Once the rice is fermented, you might notice a slightly sour taste, which is desired.
    • Before serving, you can flavor it by tempering it with ginger, green chilies, and a few drops of lemon juice. To do this, heat a little oil in a pan, add sliced ginger and split green chilies, and fry them until they’re slightly browned. Add this tempering to the pakhala. This step is optional but adds a layer of flavor to the pakhala.
    • Serve the pakhala in bowls.
    • Add some fresh coriander leaves on top for garnish.
    • You can also serve it with a variety of side dishes. Popular choices include fried items like potato fry, fish fry, or even simple accompaniments like green chilies, lemon slices, and raw onions. Badi chura (crushed sun-dried lentil dumplings) is another popular side dish.
    • A popular way to consume pakhala is to pair it with roasted or fried vegetables and fish.

पखाल भात (फरमेंटेड राइस) Hindi

सामग्री:

  1. पका हुआ चावल – 2 कप
  2. पानी – 4 कप (लगभग)
  3. एक छोटा टुकड़ा अदरक (वैकल्पिक)
  4. 1-2 हरी मिर्च (वैकल्पिक)
  5. नींबू की एक चुटकी (या कुछ बूँदें नींबू का रस)
  6. एक चुटकी नमक
  7. सर्विंग के लिए करी पत्ते, धनिया पत्ते, और तले हुए आइटम्स जैसे कि आलू भुजिया या मछली भुजिया

विधी:

  1. पखाल की तैयारी:

  1. ପକା ଭାତ – 2 କପ (Paka Bhat – 2 Cup)
  2. ଜଳ – 4 କପ (Jala – 4 Cup)
  3. ଅଦା – ଅଳ୍ପ (Ada – Alpa, optional)
  4. ହରି ମରିଚ – 1-2ଟି (Hari Maricha – 1-2 ti, optional)
  5. ଲେମନ ରସ – ଅଳ୍ପ (Lemon Ras – Alpa)
  6. ଲବଣ – ଅଳ୍ପ (Lobon – Alpa)

ପ୍ରଣାଳୀ (Procedure):

  1. ପଖାଳ ତିଆରୀ (Pakhala Tiari):
    • ବଡ଼ କପରେ ପକା ଭାତ ନେଇ ଜଳ ଡାଲନ୍ତୁ। (Bara kapore paka bhat nei jala dalantu.)
    • ଅଳ୍ପ ଲବଣ ମିଶାଇ ଦିଅନ୍ତୁ। (Alpa lobon misaai diantu.)
    • ଏହାକୁ ଫରମେଣ୍ଟ ହେବାକୁ ରଖନ୍ତୁ। (Ehaku ferment hebaaku rakantu.)
  2. ପରିବେଶନ (Paribeshan):
    • ଅଦା, ମରିଚ ଓ ଲେମନ ରସ ସହ ସ୍ୱାଦିଷ୍ଟ କରନ୍ତୁ। (Ada, maricha o lemon ras saha swadishta karantu.)
    • ସୋଜି ସାଥେ ପର୍ବ କରନ୍ତୁ। (Soji saha parba karantu.)
